Here is one trick I use often when I am taking pictures of people who blink a lot.
Looking through my view finder I wait until a person blinks and than I take the shot right after that.
This trick works very well and helped me to get down to an absolut minimum of pics with people with closed eyes.

One technique I use is to ask everyone in the shot to close there eyes, then open them. Then take the shot. They’re less likely to blink just after they open their eyes.
